Glycerol, also called glycerine, is a humectant, thickener and sweetener used across food and beverage production. As E422 it helps retain moisture, adds body and viscosity, and contributes mild sweetness, which is why it appears in products where texture and shelf stability matter. Its function depends on the application: it can keep baked goods and confectionery soft, improve mouthfeel in beverages, and prevent sugar crystallization.

Manufacturers use glycerol in baked goods, confectionery, icings, beverages and sugar-free formulations. It is a clear, viscous, water-miscible liquid, so it blends readily into aqueous systems and is easy to handle with standard liquid dosing equipment. It is hygroscopic, so keep containers closed and store it away from excess moisture. EU Regulation 231/2012 sets the specification for E422.
