Potassium Bisulfite (E228) is a preservative used to control microbial growth and oxidation in food and beverage production. Also known as potassium hydrogen sulfite or monopotassium sulfite, it releases sulfur dioxide, which inhibits yeasts, moulds and bacteria and helps protect colour and flavour during storage. Its authorised use in the EU falls under Regulation (EC) No 1333/2008, with specifications set out in Regulation (EU) No 231/2012. It is typically supplied as a white powder or solution and is readily soluble in water, so it disperses easily into liquid systems. Formulators should handle it with care, since the sulfur dioxide it releases is an irritant, and keep it in closed containers away from acids and oxidising agents. Its reactivity means it is best added at a controlled point in the process, with adequate ventilation and appropriate protective equipment.
