Powder Caramel Coloring (E150a-d) is a water-soluble color made by controlled heat treatment of carbohydrates. It gives foods and drinks the familiar brown tones of caramelised sugar, from pale amber through to deep cola brown, and it is used purely for color rather than flavor. Its mild burnt-sugar odor is typical of the class.
Manufacturers rely on it in baked goods, sauces, soft drinks, confectionery and spirits, where a stable brown shade is needed. It is supplied as a fine, hygroscopic powder, so it dissolves readily in water but picks up moisture from the air. Keep containers sealed and store dry, and expect some caking if it is left open. Add it to the aqueous phase early so it disperses evenly.
