Sodium Hexametaphosphate, also known as E452(i), is a phosphate salt with the formula Na6O18P6. In food and beverage production it acts as a sequestrant, binding metal ions that would otherwise catalyse oxidation or destabilise emulsions, and it helps control pH and improve water retention. Its category, phosphate, covers similar salts used for these functions. Common names include hexasodium hexametaphosphate, hexasodium metaphosphate and natrium hexametaphosphat.

Manufacturers use it in processed meats, seafood, dairy and beverages where ion control and texture matter. It is supplied as a white powder or granules, freely soluble in water, and is typically dissolved before addition. It is hygroscopic and can hydrolyse in solution, so keep it dry and sealed. EU Regulation 231/2012 sets its specification. Handle as a fine dust, using appropriate containment and personal protection.
