Sodium pyrophosphate, also known as tetrasodium pyrophosphate or E450(iii), is a phosphate salt with the formula Na4O7P2. In food and beverage production it functions as an emulsifier, stabiliser, and pH buffer. It helps control acidity, prevents fat separation, and improves texture in processed foods. As a sequestrant, it binds metal ions that can cause rancidity or discolouration, supporting product consistency and shelf life.

Manufacturers use sodium pyrophosphate in meat and poultry processing, seafood, processed cheese, and baked goods. It is supplied as a white powder or granules and is highly soluble in water, making it easy to incorporate into liquid systems. It is hygroscopic and should be stored in a cool, dry place to prevent caking. Formulators should handle it with appropriate dust control measures, as fine particles can become airborne.
